Although this is not a grilling recipe, it goes so well with grilled meats, we had to include it. This is a great make-ahead party dish as it keeps well in the refrigerator for 1-2 days.
Ingredients:
- 1 lemon, freshly squeezed
- 1 tablespoon cider vinegar
- 2 cloves garlic, minced
- 1/4 teaspoon cayenne
- 1/2 teaspoon ground caraway seed
- 1/2 teaspoon ground cumin
- sprig cilantro for garnish
- 1 tablespoon olive oil
- 3 tablespoons yogurt
- 1 lb. grated carrots
- dash salt
Steps:
- Combine the lemon juice, vinegar, garlic, cayenne, caraway and cumin in a small glass mixing bowl. Whisk in olive oil and yogurt, and season with salt. Pour over grated carrots and toss to coat. Garnish with sprigs of cilantro.
